Banana Oat-Yogurt Muffins

Ingredients:

  1. 2 cups old fashioned oats

  2. 2 large ripe bananas

  3. 2 large whole eggs

  4. 1 cup plain fat-free Greek yogurt

  5. 2 Tbsp raw honey

  6. 1.5 tsp baking powder

  7. .5 tsp baking soda

  8. .5 tsp vanilla extract

  9. 1/8 tsp pink salt

Toppings:

  1. 1/4 cup 60-80% cacao chips

  2. 1/4 cup chopped walnuts

Instructions:

Preheat oven to 400° F. Line a cupcake pan with liners and spray them with cooking oil.  In a blender (makes sure you have a high-power blender), all add ingredients except the toppings. Mix well. Fill up all cupcake liners 3/4 full. Add the toppings (you can mix or leave at the top).  Bake for 13-15 minutes. Enjoy!
