IT’S FALL Y’ALL!
It’s also apple season. I had so many apples in my fridge (I usually eat one or half of one every day but I wasn’t getting to them on time, so before they go bad….use them up!) that I had to do something special with them.
This is the paleo/healthy version of an apple pie. Yes, we love ‘dem Apple Pies but they have soo much sugar it can interfere with your goals of staying healthy and fit. Unless you have it as a re-feed or cheat meal.
Here’s the recipe below:
INGREDIENTS:
5-6 medium apples, peeled and cubed
2 tsps ground cinnamon
1 tbsp pure maple syrup or raw honey
3 tbps water
1 cup whole rolled oats
1/2 cup almond flour (I make my own)
1/2 cup chopped walnuts
1 tsp ground cinnamon
1/4 tsp pink himalayan salt
1/4 cup pure MELTED butter (I use Kerrygold brand)
1/4 cup pure maple syrup or raw honey
Sprinkle of nutmeg
INSTRUCTIONS:
Peel and cube all the apples. Place in a large bowl.
Add the first 3 ingredients (syrup or honey, cinnamon and water).
Mix well. Grease a large baking pan with butter and preheat oven to 350 F. Spread apple mix on the baking pan.
In a bowl, combine the remaining ingredients (oats, flour, walnuts, cinnamon, salt, melted butter and syrup).
Sprinkle and spread on top of the apple mix.
Sprinkle nutmeg on top. Bake for 45 minutes until golden brown. Serve hot with some warm greek yogurt or if you’re splurging, vanilla ice cream!
Makes 8 servings.
