Easy to make and your family will love! This recipe makes 2 small meatloaves.
2 lbs ground turkey
1 tsp sea salt
2 tsp italian seasoning (no salt)
1 tsp ground cumin
1/4 tsp ground black pepper
2 whole eggs, whisked
1 cup whole rolled oats
1 chopped, medium red onion
1 chopped, medium bell pepper (any color)
2 tsps minced garlic
1 cup finely-grated carrots
Line two long molds with parchment paper and spray them with the cooking spray. Preheat oven to 375 F. Sautee the onion, garlic, bell pepper and carrots in a pan until translucent. Add them to the ground turkey and mix in the rest of the ingredients. Mold in the baking pans and bake for 40 minutes.
I topped it with a sauce made up of: sugar-free ketchup, Dijon mustard and 1 tsp of raw honey.
